About a month ago our house had a flood issue.... a SERIOUS flood issue.... so we took up refuge at with Mom and Jon, along with the dogs!

Dinner 01.08.09



Dinner tonight is Flatlander Chili... healthy and it makes a TON of servings so the budget can stretch farther...

INGREDIENTS

2 pounds lean ground chicken, 1 (46 fluid ounce) can tomato juice, 1 (29 ounce) can tomato sauce, 1 1/2 cups chopped onion, 1/2 cup chopped celery, 1/4 cup chopped green bell pepper (I used green chiles), 1/4 cup chili powder, 2 teaspoons ground cumin, 1 1/2 teaspoons garlic powder, 1 teaspoon salt, 1/2 teaspoon ground black pepper, 1/2 teaspoon dried oregano, 1/2 teaspoon white sugar, 1/8 teaspoon ground cayenne pepper, 2 cups canned red beans, drained and rinsed


DIRECTIONS: Place ground beef in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside. Add all ingredients to a large kettle. Bring to boil. Reduce heat and simmer for 1 to 1 1/2 hours, stirring occasionally.

We are also having salad and brown rice!

Salmon Dinner 01.06.09


Tonight we had Spice-Crusted Salmon and Lemon Spinach with a side of brown rice and salad!


It looked like the picture and tasted great!

Here are the details...

SALMON: 2 tsp paprika, 2 tsp cumin, 1 tsp chili powder, 1 tsp cinnamon, 2 tsp grated lemon peel (zest), 2 Tbsp lemon juice, 1 Tbsp olive oil, 6 salmon filets (we used 2), 2 cups sliced onions

SALMON: 400 degrees, coast baking dish with non fat spray; combine paprika, cumin, shili powder, cinnamon, lemon zest & juice, oil and S&P to taste. Mix well, blending into a paste, dry the fillets and then coast with the paste.

In the baking dish place the onions for 20 minutes; then place the fish on top of the onions and bake for 15 minutes.

SPINACH: 1 Tbsp oil, 3 Tbsp shallots and 1 LB spinach - sautee for 2 minutes, then sprinkle with 2 teaspoons of lemon zest and 1 Tbsp lemon juice... season with S&P

RICE: Instant brown rice...

RIP Mr Poops











Last January we put down one of our family members due to cancer in the hip. Mr Poops was the dog you always wanted in so many ways... patient, kind, loving, but he could not stay with us as long as we wanted. We will always miss him and love him, but we know in our hearts he would want us to be happy... that was simply The Poop.






His love of us inspired us to try the LAB game again so now we introduce Mr Puppy Bear (aka Jackson Duke Meigs Shotton... a black lab puppy who was born on 10-10-08 and is truly living up to Mr Poops memory... so far he ate Christi's flip flops, loves to fetch but not retrieve, eats like a PIG, sleeps like a baby and even Diane likes him!




Now we cannot leave out Mr Fatty (aka Dakota - the first born)... he is slowly warming up to the idea of not being the "only dog" and he is the definition of the "grumpy old man" but after nine years he is opening up to the idea of being a mentor (ie: covert trainer of bad dog behavior) to Jackson...
